Fry’s Red Wheat Bread

There’s a new bread slinger in town. Byron Fry swaggers into Niagara Grocery in his green apron and brown checked vest with baskets full of delicious home baked bread, and you can tell he means business. He’s only been baking bread for 3 years, yet he’s built up a very good reputation for his goods at local food hotspots like the James Bay Market.

 

His European style country breads are made from mixed grains reliant on the addition of rye flour to wheat flour. He uses natural leaven giving it a unique flavour and aiding in digestibility for those with intolerances to wheat. Using local heritage varieties of Red Spring Wheat ensures freshness, intense flavour and sustainable practices. As a result he has trouble keeping up with demand.

 

And Byron comes by his moniker honestly. “After I’d been baking for awhile, I found out there were serious bakers on both sides of the family going back over a hundred years,” says Fry. His maternal grandfather owned numerous bakeries on Vancouver Island and his great grandfather, Charles Fry, moved from Bristol in the 1890s to run a bakery in Moosejaw, then left for Victoria where he ran a bakery called Fry’s Red Wheat Bread until just after the second world war.

 

Baking out of a rented commercial kitchen in Metchosin has allowed him to expand production and distribute a little more widely through the winter months. You can now purchase Fry’s high quality whole wheat country bread, baguettes and pastries at Niagara Grocery, Fairfield Market, Hilary’s Cheese and the Victoria Winter Market.
