Eat, drink, celebrate. It’s a mantra that Glo takes to heart, whether it’s serving their West Coast fusion cuisine, creating unique seasonal cocktails, or introducing guests to their wonderful view.

The restaurant’s floor-to-ceiling windows and wraparound patio make great vantage points for the peaceful and picturesque Selkirk Waterway, an idyllic sheltered harbour. With a cold beer in the summer, or a specialty coffee and blanket in the winter, it’s one of the best hangouts in the city.

Creative, fresh and local West Coast Cuisine

Of course, you’ll want something to eat with that. Glo’s newly revamped West Coast menu features longtime local favourites as well as new, Asian and Mediterranean-inspired fusion cooking courtesy of new Executive Chef Ryan Hayter (formerly of Fetch Restaurant at the Ocean Front Resort in Uclulet.)
From Saltspring Island mussels, to the new Chophouse steak menu, to vegetarian choices like the funghi pizza with truffle oil and sautéed leeks, Glo has options for everyone without compromising spice, freshness and flavour. The menu highlights all kinds of island-grown produce, and feature dishes change to match what’s
in season. Local suppliers include the family-owned Seven Seas Seafood, Choux Choux Charcuterie, and JC Herbs from up-island. “We use island or local products as much as we can,” says Chef Ryan. “Even if it costs a little more, we find the quality is always better.”

Unique seasonal cocktails, wines and brews

Glo was originally styled as a europub, and though the interior and general esthetics have been completely rebuilt, their shining set of taps haven’t lost their lustre.

Glo offers a selection of hand-picked local and import beers, from Guinness and Peroni to Hoyne’s Pilsner and Driftwood’s Fat Tug. A selection of ciders and gluten-free beers are available as well, but what really steals the show are Glo’s seasonal cocktail menus.

Designed by bartender Erin Savory, they currently feature such delights as the Mango Jalapeno Martini and a Pimms cooler made with lemon and thyme.

Glo’s white and red sangrias are also awesome choices for a chill patio session, with the in-house DJ Joshua James spinning live at the outdoor music booth — and don’t forget about Thursday’s Ladies Night events and the daily Happy Hour specials, with discounted drinks and appies from 2-5pm every day and late at night.


Custom-hosted events & Parties

The restaurant is a proud member of the Gorge Waterway neighbourhood, and is proud to contribute by sponsoring a variety of community events.

Over the years they’ve hosted the annual Cops for Cancer fundraiser, the Gorge Fest Dragon Boat Regatta, and numerous wedding receptions and private parties.

With a 200+ capacity and a sharp, modern esthetic, the dining room makes a great venue for any event, and the Glo team has plenty of experience with organization and planning.

Glo Executive Chef Ryan Hayter

Starting at age 15, Chef Ryan Hayter’s career has taken him from the assembly line kitchen of a popular Calgary franchise to lobster carpaccio, molecular gastronomy, and the world of fine dining and celebrity chefs — all without a lick of culinary school.

In 2014, after several years studying under such luminaries as Vancouver’s Andrew Springette and Morne van Antwerp of the Ritz Carleton, Ryan left the Ocean Front Resort in Uclulet and returned to Victoria to take over Executive Chef duties at Glo. He brings with him a wealth of different styles and experience that continue to transform the menu throughout his tenure. “I like to do a real fusion of cooking, Southern, Mexican, a lot of Asian influences as well as the French background I first started with,” he says. “I want to make food that’s fun, food people come back for, not just the sort of run of the mill stuff everyone else is doing.”

Ryan’s signature style is visible throughout Glo’s newly revamped menu — but for a real study in his talents, try one of Glo’s new Chophouse steaks inspired by his hometown of Calgary, Alberta.
