Working closely with local farms and producers, Chef Hossack’s menu allows guests to enjoy farm-to-table dining in a relaxed setting.“We’re taking away the stigma of fine dining. We’re going more casual, honest, with good local food as much as we can in the season. For example, our vegetables are coming from Pemberton (Rootdown Organic and Good Fields Farms) for our main dishes right now,” he says.“Whatever they have fresh, that is what goes on the menu this week.”Appetizers come ‘for you’ or ‘for two’ providing a range of options catering to all appetites with feature dishes including Albacore Tuna Crudo with Citrus & Green Chili vinaigrette, jalapeno and cilantro or the Pemberton summer salad which features summer squash, local greens, herb vinaigrette from Nita Lake Lodge’s rooftop garden. To follow, guest are encouraged to choose their main from options such as cider brined pork chop, Farm Crest roasted chicken breast or Kuterra salmon. Simple and delicious, mains are designed to be paired with a selection of fresh, organic sides served fresh from the farm.The focus is on the dining experience as a whole – long summer evenings enjoying local, quality food, lake views and sharing it all with your fellow diners.
