This recipe can easily be made vegan as well, substituting egg replacement for the eggs. Ingredients:1 cup mashed banana1 cup sorghum flour2 tsp baking powder1/2 tsp. baking soda3/4 tsp. xanthan gum1/2 tsp. salt1 tsp. cinnamon1 cup brown sugar1/3 cup olive oil1 tsp. lemon juice2 eggs1/4 cup coconut milk1/2 cup chocolate chips or raisinsMethod:Whisk together dry ingredients. Add oil lemon juice, eggs and coconut milk. Stir to combine. Add brown sugar and mashed banana. Stir to combine. FOld in chocolate chips or raisins. Bake at 350°F for 40 min – 1 hr.
