Bistro 28’s Mussels in Maple Chipotle Cream Sauce

Sam Chalmers, Owner and Chef of Bistro 28, generously shares his well loved recipe for mussels this week. This dish recently received an Honourable Mention in the 2011 Exceptional Eats! Awards.

 

 

2 Onions sliced


1 tblsp Fennel Seed


1 can Chipotle peppers in Adobo, puréed


½ cup Maple Syrup


1 tsp Salt

 

2 lbs. Mussels


½ Cup White Wine


1/3 Cup Heavy Cream

 

 

Caramelize onions slowly in a large pan. Add fennel seed, Chipotle Puree, Maple Syrup & Salt.

 

Add Mussels. Deglaze with White Wine. Reduce. Add Heavy Cream. Reduce.

 

Serve with crusty baguette.

 

Editor’s note: Mussels should open after about 5 minutes. Be sure to discard any mussels that have not opened.
