This dish recently received an Honourable Mention in the 2011 Exceptional Eats! Awards. 2 Onions sliced 1 tblsp Fennel Seed 1 can Chipotle peppers in Adobo, puréed ½ cup Maple Syrup 1 tsp Salt 2 lbs. Mussels ½ Cup White Wine 1/3 Cup Heavy Cream Caramelize onions slowly in a large pan. Add fennel seed, Chipotle Puree, Maple Syrup & Salt. Add Mussels. Deglaze with White Wine. Reduce. Add Heavy Cream. Reduce. Serve with crusty baguette. Editor’s note: Mussels should open after about 5 minutes. Be sure to discard any mussels that have not opened.
