Butternut Squash Chutney


1 onion
2 tbsp garlic puree
2 lbs butternut squash,1 cm dice
1 cup brown sugar
1/2 tsp Cinnamon
1 tsp Ginger
1/2 tsp allspice
1/2 tsp nutmeg
1 tbsp sambal olek
500ml white wine vinegar
1 cup water



Combine all ingredients in a saucepan. Bring to a boil, reduce to simmer until squash is tender. Cool.
