DIY Blueberry & Lemon Curd Shortcakes in a Jar

Ingredients

1 box Stonewall Kitchen Blueberry Scone Mix

1 cup lemon curd (we like this recipe)

1 cup whipped cream (we like this recipe)

Stonewall Kitchen Wild Maine Blueberry Jam

Stonewall Kitchen Wild Maine Blueberry Syrup

1 cup Fresh berries

Fresh mint

1 lemon, zest

4-6 mini mason jars

 

 

Directions

Prepare 1 box of Stonewall Kitchen Blueberry Scone Mix, as per package instructions.

Allow to cool and break into smaller pieces.

Layer a dollop of lemon curd at the bottom of the jars, add crumbled scones, fresh blueberries, a dollop of blueberry jam. Repeat one more time.

Top with blueberry syrup, a dollop of whipped cream, fresh mint and lemon zest.

Serve immediately.
