Luckily, our options for comfort food when the weather outside is frightful have increased just in time with the opening of combined Discovery Coffee/Hudson Jones Baking in James Bay. Piping hot tomato, vegetable and french lentil soup with herbed ricotta cheese and Hudson Jones freshly baked whole wheat bread.Not only can you purchase Discovery’s award winning coffee from a roster of talented baristas including owner Logan Gray, but house made baked goods and pastries from co-owner Ryan Smith are now available 7 days a week. “It was pretty clear from the beginning that the products compliment one another,” said Gray. “The real synergy lies in our dedication to simple, time-honoured methods and home-cooked food.” They’ve assembled a great team of culinary experts, including pastry chef, Sarah Green, formerly of Delish in Oak Bay. “As the vision for the partnership came together, Sarah was always our first choice,” said Smith. “She’s got great experience, and her pastries are second to none.” Those shared values have lead to the creation of a comfortable cafe/bakery setting offering food and drink to warm the soul. Everyday beginning at 6:30 am you can purchase some of the best coffee in the city, 8 different loaves of bread, and simple, home-made dishes sourced locally with prices ranging from $4-$8. The addition of Discovery Coffee/Hudson Jones Baking to the neighbourhood guarantees great coffee, freshly baked bread, delicious home made soups and a great new venue in James Bay.
