Gluten-Free Banana Loaf from Santé

This loaf has been selling out at Quadra Village’s new Gluten-Free Café, Santé. This recipe can easily be made vegan as well, substituting egg replacement for the eggs.

 

Ingredients:

1 cup mashed banana

1 cup sorghum flour

2 tsp baking powder

1/2 tsp. baking soda

3/4 tsp. xanthan gum

1/2 tsp. salt

1 tsp. cinnamon

1 cup brown sugar

1/3 cup olive oil

1 tsp. lemon juice

2 eggs

1/4 cup coconut milk

1/2 cup chocolate chips or raisins

Method:

Whisk together dry ingredients. Add oil lemon juice, eggs and coconut milk. Stir to combine. Add brown sugar and mashed banana. Stir to combine. FOld in chocolate chips or raisins. Bake at 350°F for 40 min – 1 hr. Loaf is done when cake tester inserted comes out clean.
