The Food
Executive Chef Sam Harris’ menu is inspired by both land and sea, and celebrates Canada’s local and seasonal products with a classic French twist.

“I let my food speak for itself,” says Chef Harris. “It’s ingredient-driven yet understated and approachable. I want my dishes to convey a real sense of place and I am excited to continue my close work with the amazing local producers on Vancouver Island.”

Look for house-made sausage and charcuterie, and in-house dry aged beef. Fresh local produce and seafood. Watch for some old classics with a creative new preparation.

For an exceptional dining experience, ask about the Chef’s 5 Course Tasting Menu, with optional wine pairing and caviar service.

The Bar

“Diverse and approachable, a little something for everyone” is how sommelier Anna Romeyn Ion describes the wine program at The Courtney Room. With a wine list of approximately 60 wines, a wine preservation system allows The Courtney Room to serve more than 20 wines by the glass, including 4 sparkling. Anna and Adrian Gatt, Food & Beverage Manager, have curated a wine list that represents the best of varietals and regions. British Columbia wines are showcased, and French wines are well represented.

Look for the best in spirits, beer and cider, including a selection from Vancouver Island. The cocktail program includes the classics, as well as some house originals.

The Room
Taking cues from the old grand dame hotels of Paris, Sharon Bortolotto of BBA Design was inspired by the classic French bistro. The Courtney Room boasts high ceilings, and is layered withelements of Art Nouveau to create a casually elegant ambience. Focal features include commissioned artwork by Blu Smith in an abstract expressionist style and a central black granite bar framed between two paneled wood columns with white marble chevron detail – a place to gather and be seen.

Daniela Cubelic: SILK ROAD is led by our Chief Tea Ambassador and founder, Daniela Cubelic. Hailed as “Canada’s Queen of Tea” (Globe & Mail), and “Canada’s Tea Master” (Vancouver Sun), she is a leading authority on tea and tea culture, and an accomplished Tea Master, who was trained by Chinese and Taiwanese herbalists and tea masters. Daniela has been featured locally, nationally and internationally in numerous magazines, publications, and on radio and television. Recently, she helped design a revolutionary new teacup that won a coveted Red Dot design award. Daniela’s love for tea and tea culture is steeped in her veins, and while she is trained in tea’s most ancient traditions, she is equally likely to be found forging new frontiers in tea- from cooking with tea, tea and food pairing, to incorporating tea into our skin and bodycare products.

201210303405-(2)Merridale is located in the Cowichan Valley on Vancouver Island. The valley offers us perfect growing conditions for cider apples. It gives us climate, aspect and soil conditions to grow world-class cider apples. All of our ciders and spirits are crafted at our farm and then distributed to pubs, restaurants and private liquor stores on Vancouver Island, the lower mainland, and of course our own store and bistro.

The cider

At Merridale we take no shortcuts with our authentic, all-natural craft ciders. Made from 100% pure juice, we ferment slowly and naturally, to delicately bring out all of the flavour the fruit has to offer. We do not use concentrates, chemicals at bottling, pasteurization, or fine filtration of juice. Made from heritage cider apples, each cider is a blend of apples aimed at a particular palate.

The spirits

Our brandy house is dedicated to craft artisan distilling. Our spirits are made from BC fruits and distilled in an Alembic Still in small batches by distillers Rick Pipes, and Laurent Lafuente.

Tours

We welcome your visit. Our cellar doors are open throughout most of the year. Many of our tours are self-guided and can be enjoyed at your own pace, such as the cellar or orchard walk. Private guided distillery tours journey into the art of craft distilling, and finish with cocktails at the bar. Most of our tours can be packaged with lunch or dinner options, and we are happy to customize. Oh yes, there is a tour for the children in the orchard too.

Bistro

Our gastro-pub style bistro invites adults and children of all ages to enjoy local fare in a relaxed orchard setting. Savour hearty meals prepared the old fashion way in a wood fired brick oven, made from local ingredients. Summer Sundays are reserved for live entertainment, pizza and cool drinks on the deck.

Tasting Bar

Sample our wares at the tasting bar to learn about the nuances of our award winning ciders and spirits from our knowledgeable staff. Our skilled bar team concoct daily specials, and welcome the opportunity to share their secrets.

Our farmhouse store

Our farmhouse store is a plethora of tastes and visions to tantalize the senses. Cider, spirits and liqueurs and fortifieds; an in-house bakery; Plus a store stocked with local art, gifts, and culinary delights.

Weddings & events

Merridale features a full-service wedding package with staff, a stunning reception venue, and complete worry-free wedding packages that take care of all the little details from table settings to tents to romantic outdoor lighting. Elegance at an affordable price.

Yurts

The yurts are one room cabins that let you experience the peacefulness of the countryside. Situated in our orchard overlooking the pond, you can fall asleep listening to the sounds of nature.

ABOUT US

CANOE brewpub is located in a designated heritage site on Victoria’s active inner harbour. Originally the ‘City Lights’ building, it was erected in 1894 to house the coal-powered electric generators which powered Victoria’s streetlights. Today, the building stands as a proud heritage landmark on the downtown waterfront.

CANOE’s commitment to sustainable business practices is apparent across all aspects of our operation. We maintain a comprehensive compost and recycling program, and partner with local suppliers throughout the year to use fresh, seasonal, local products in our menu.
